spicy chicken & potato stew (dakbokkeumtang - 닭볶음탕)

It’s cold outside, and it has been raining for days. All I want to do is cuddle up in my blanket and eat hearty comfort food like this spicy chicken potato stew. It’s one of my favorite dish to make and leftovers taste even better the next day. This Korean stew includes all the ingredients you probably already have at home (if not, you can get everything at your local grocery market!), it’s easy to make, and the spice with a little bit of sweetness is so satisfyingly addicting.

This dish is known as dakdoritang (닭도리탕) or dakbokkeumtang (닭볶음탕) and this is my recipe!

Ingredients:

Serving size: 4-5

Chicken and Vegetables

- Chicken Drumsticks - 6-7 drumsticks

- Potato - 3 cut into medium pieces

- Carrot - 1 cut into medium pieces

- Onion - ½ chopped into medium pieces

- Jalapeno - 1 sliced thinly

- Water - enough to cover the chicken (aprx 4-5 cups)

Soup base

- White or Brown Sugar - 3 tbs

- Minced garlic - 1 tbs

- Soy sauce* - ½ cup

- Korean red chili powder (고추가루)* - ⅔ cup

* These are estimated measurements. As you cook and taste the stew, add more/less according to your preference!

+For the no-spice lovers, for the soup base, put 1 cup soy sauce, ½ cup sugar, 1 tbs minced garlic, ½ cup chopped green onion, 1 tbs of ginger (optional), and 1 tbs sesame oil.


Let’s get started!

1. Take out your chicken from the package and wash thoroughly.

2. Heat up a medium sized pot on the stove - medium to high heat. Pour water and put the chicken in. The water should be enough to cover the chicken. Once the water boils**, drain the water (there will be white foam things floating in the water like shown in the photo. This part is important!), take the chicken out, and rinse the pot.

**While you are waiting for your pot to boil you can chop your vegetables.

3. In a clean pot, put the chicken and pour water (This water will be for your stew). Turn on the stove to medium to high heat and add sugar. (If you want a sweeter taste you can add more sugar as you go.)

4. Once the water boils, add garlic, soy sauce, and red chili powder. Taste to see if you need to add any more soy sauce or red chili powder. I ended up adding in a tablespoon of the red chili powder because I like it extra spicy!

5. Add the potatoes, carrots, and onion and boil for about 7 minutes with a closed lid.

6. Reduce the heat to medium and stir gently to change the position of the chicken and the vegetables.

7. Add jalapeno and stir again. Close the lid and let it simmer for another 8 mins. You can check to see if the potato is cooked. The longer you let it simmer the stew will thicken! I like to let it simmer a little longer than normal because I like my stew thick!

8. If you have green onion and sesame seed add them as garnish and turn off the heat.

9. Now get your bowl of hot steamed rice and enjoy!
