apple soy braised pork ribs

Hi guys,

There was a huge sale on pork ribs the other day so of course I grabbed one rack! I’ve been wanting to share this recipe on my blog after posting it on my Instagram story about a year ago. I’ve gotten a lot of responses on it and it made me so happy that some people actually followed my story and made it at their home! 

This is a recipe that I found online several years ago on Youtube (unfortunately, I can’t locate the actual recipe right now to share :() and I fell in love with how easy it was. Mind you, this recipe does take some time, about 1hr 30min, with a lot of waiting time so you can multitask and do other activities while cooking. I actually take that time to clean the kitchen and put away everything I use so I don’t have to do too much cleaning after eating, haha. 

Anyways! This is the recipe for pork ribs. In terms of ingredients, you don’t need to add carrots, potatoes, jalapeno, or onion, and just cook the pork ribs only but if you have other vegetables at home, feel free to chop some in. The sauce includes grinded apples that add natural sweetness which I love, makes the meat more tender and falls off the bone. No need for an oven or a grill, everything will be made in just one pot. 


Ingredients:

Serving size: 2-4

  • Pork ribs - 8-10 ribs

  • Carrots - 2, chopped medium pieces

  • Potato - 2, chopped medium pieces

  • Jalapeno - 1, sliced 

  • Onion - ½ sliced

  • Sesame oil - 3 tbs

Sauce:

  • Soy sauce - ¾ cup, low-sodium preferred for lighter taste.

  • Water - 1 cup, add more if needed

  • Mirin or cooking wine - ½ cup

  • Sugar - 3 tbsp

  • Minced garlic - 3 tbsp 

  • Grinded apple - ½ of an apple

  • Black pepper - 2 tsp

  • Green onion - 1 stalk, chopped

Let’s get started!

1. Rinse the pork ribs and let it sit in the water for at least 20-30 minutes. Take out the ribs from the package and wash thoroughly in running water. Then put the ribs in a clean bowl with water and let it sit for at least 20-30 minutes to draw out the blood.

**While waiting, make the sauce by mixing all ingredients in a bowl and set it aside.

2. Cook the ribs slightly in boiling water for 5 minutes. Heat up a medium sized pot on the stove - medium to high heat. Pour water generously and once it boils, put the pork ribs in. Let it cook for about 5min.

3. Drain the water, take the pork out, and wash with cold water. I like to do this step to thoroughly clean the pork ribs so that it has a clean after taste!

3. Put the ribs and the sauce in a clean pot. In a clean pot, put the pork ribs in and pour the sauce. Make sure the ribs are generously covered in sauce. Heat the stove to medium and let it cook for about 30 minutes with a closed lid.

**While you are waiting, chop your vegetables.

4. Taste test the sauce. Taste the sauce to see if you want to add more water - I prefer a lighter taste so I added in ¼ cup of water but of course you can just leave it the way it is!

5. Put in carrots, potatoes, onions, and jalapenos. After cooking for about 30 minutes, put in the veggies and let it simmer for 20 more minutes in a closed lid.

7. Add garnish. Pour in sesame oil, and if you have any leftover green onion, sprinkle it on top but if not, that’s totally fine!

8. The apple soy pork rib is quite salty, so you definitely need some rice to help you out. Now get your bowl of hot steamed rice and enjoy!
