spicy pork bulgogi (돼지불고기)

Spicy pork bulgogi is one of the most popular Korean bbq dishes and it is easily one of the most delicious! Made with simple Korean ingredients, spicy pork bulgogi is crispy, fatty pieces of pork marinated with gochujang paste for spicy-savory flavors and apple for that unique sweetness. It is absolutely tasty even just by eating it on top of steamed rice. 

If you’ve noticed, a lot of Korean meat dishes are called “bulgogi,” which literally translates to as “fire-meat.” It’s basically any marinated thinly sliced meat that has been cooked over flame and honestly, it’s a spot-on description for Korean meat!

One thing I love about spicy pork bulgogi is that it stores well - it is still unbelievably tasty even after 3-4 days in the fridge. One of the best ways to eat this as a leftover is by making a Kbbq taco - on a warm tortilla, add a little bit of diced onion, cilantro, and pineapple if you have it, and it is DELICIOUS. Ingredients:

  • Pork butt, shoulder, or belly - 1½ lb, sliced thinly

  • Onion - ½, chopped thinly

Sauce:

  • Gochujang - 3 tbsp

  • Cooking wine - 2 tbsp

  • Soy sauce - 4 tbsp

  • Sugar - 4 tbsp

  • Minced apple - 2 tbsp

  • Minced garlic - 2 tbsp

  • Minced ginger - 1 tbsp, optional

  • Sesame oil - 3 tbsp

  • Black pepper - 1 tsp

  • Sesame oil - 3 tbsp

  • Black pepper - 1 tsp

Let’s get started!

1. In a large mixing bowl, add pork, onion, and all the ingredients for the sauce. Mix well with your hand and let it marinade at least 30 minutes to overnight. Thicker the meat, longer marinate time.

2. Heat a large skillet over high heat, add cooking oil. Add marinated pork and cook until pork is fully cooked and onions are soften - about 7 to 9 minutes.

3. Transfer to a serving plate and garnish with sesame oil, sesame seeds, and green onion. Serve with steamed rice, some lettuce for lettuce wrap and other Korean side dishes! Enjoy!
