leftover edition: mashed potato & ham croquette

Hi guys!

Today I will be sharing a recipe that hopefully will be used when you have leftover mashed potatoes at home. I grew up in a family where we don’t throw away food easily and we learned to love leftovers of any kind. Because of that, I always try to search recipes that incorporate leftovers into a “brand new” dish before reheating the same food. So when I had leftover mashed potatoes, I was like, ‘what can I make that will re-dress the leftover mashed potato into something a little more interesting?’


After looking up multiple recipes with mashed potatoes, I found the ultimate recipe that is easy and delicious: Leftover Mashed Potato Ham Croquette! These are hot potato patties with cheesy mozzarella filling that makes you want to grab some more for later. Dip it in sour cream or ranch, and it’s a perfect appetizer!


Ingredients:

Serving size: 3-4

  • Mashed potatoes - 3 cups

  • Shredded mozzarella cheese - 1.5 cup

  • Flour - ⅓ cup

  • Large egg - 1 

  • Salt or Garlic salt - ½ tsp

  • Oil - 4-6 tbsp for light frying

If you’d like to make it a little more flavorful, add:

  • Ham - 2 slices, chopped finely

  • Jalapeno - One whole, chopped finely

  • Carrots - ½, chopped finely

  • Minced garlic - 2 tbs

Let’s get started!

1. In a medium bowl, combine the mashed potatoes, mozzarella cheese, flour, egg, and salt. If you have ham, jalapeno, carrots, or minced garlic, add those in as well.

2. Mix well and the mixture should be thick and should hold its shape. If it's too loose, add a tablespoon of flour at a time (this will depend on the consistency of your mashed potatoes).

3. With gloved hands, scoop out the mixture and form it into small patties, about 1/3 inches in thickness. Coat it with a little bit of flour.

4. Heat oil in a pan and fry the patties in a single layer on each side for 3-4 minutes till golden brown on both sides.

5. It should look like this on both sides and it is all done!

6. Serve hot with sour cream or ranch. Enjoy!
